This Week's Menu 2/27

 (last week's Bountiful Basket)

Hello there!  I apologize for the lack of posts last week, but it seems that a family full of sickies and a computer keyboard that went died seemed to get the better of me. However, things are looking up. The family is on the mend, and a new keyboard has been purchased and installed. The upside of being stuck at home with the invalids, is that I only spent $6.72  milk this week. My grand total spent on groceries for the month was $484.37. That puts me $84.37 over budget, but the larder is stocked and next month I should be able to stay within my $400.00 budget.

With this week's menu I will be using up some  meat out of the freezer that need's to be used. I will also be using up the rest of last week's Bountiful Basket. We will be eating:

Sunday
Breakfast Burritos
Fruit Salad

Monday 
Chicken Noodle Soup (I am tossing some wilty looking spinach in the soup to use it up)
Blueberry Muffins

Tuesday
BBQ Chicken Sandwiches
Homemade Buns
Coleslaw
Mashed Sweet Potatoes

Wednesday
Venison Steak with Gravy
Mashed Potatoes 
Green Peas

Thursday
French Toast
Bacon
Applesauce

Friday
Leftovers

Saturday
Pizza 
Green Salad 
Home Canned Pears

I seem to have an abundance of cabbage ( I got two heads in my basket last week). So, my favorite Bloggy Friends,  I need your ideas! What are your favorite ways to use up cabbage?

  1. I am glad everyone is on the mend! It makes for a long week when you have sick kids!! Your menu sounds great. I also have two heads of cabbage to use and soon. I am going to make veggie soup and then I love cabbage sausage rolls. YUM!!

  2. Sounds like an interesting week ... so glad your crew is back on their feet and you have a new keyboard! I'm clueless on the cabbage. Have really only used it in the past for cole slaw. I'm going through the freezer, too. Finally roasted a chicken yesterday that has been in there for a while.

  3. Cabbage Rolls

    1 lb ground beef
    1/4 tsp salt
    1/4 tsp pepper
    1 egg
    2 slices bread, cut up
    1/4 cup water
    1/2 cup uncooked rice
    12 large cabbage leaves
    1/2 tsp salt
    1/2 tsp. chili powder
    2 cans tomato soup
    1 cup water

    1. Combine meat, slat, pepper, egg, bread, 1/4 cup water, and rice.
    2. Divide into 12 equal parts and shape into cones.
    3. Steam cabbage leaves in hot water until leaves become pliable.
    4. Place meat in each leaf. Roll tight and place in a 2 quart casserole.
    5. Sprinkle salt, chili powder, over rolls.
    6. Mix tomato soup and 1 cup water.
    7. Pour liquid over rolls.
    8. Cover and bake in 375 degree oven for 1 1/4 hours. Yield: 6 Servings.

    Cabbage works well finely shredded and used in place of lettuce in tacos or nachos

    My favorite cabbage meals are:
    egg rolls and veggie lo mein
    shredded in veggie beef soup
    in a casserole with seasoned browned ground beef, half a head shredded cabbage 1-2cans tomato sauce (depending how juicy you want it) and topped with cheddar cheese. Bake Until bubbly.

  5. This is my favorite!!! I can eat just this for a meal any day! In fact I'm making it tonight and grilling some chicken to go with it. It calls for Napa cabbage but I've used regular cabbage too. The napa cabbage is lighter and fluffier but both still great!
    1 head Napa cabbage
    1 bunch green onion
    slivered almonds
    2 pkg ramen noodles
    1/2 c sugar
    1/2 c peanut oil
    1/4 c white rice vinegar
    1 TBSP soy sauce
    chop up cabbage and onion
    place almonds on cookie sheet and bake until golden brown (I skip the baking and throw them in)
    crush ramen noodles (don't use the flavor packet)
    SAUCE: Combine sugar,oil, vinegar & soy sauce and let chill for a couple hours (I use it right away) Pour over salad and toss to coat well and enjoy!

  6. Glad to hear that everyone is feeling better! My favorite way to use cabbage is in beef cabbage soup...just got finished eating it for lunch today.

  8. I'll be using cabbage in a stir fry tonight, but veggie soup is my absolutely favorite way to eat cabbage. oh, almost forgot, on a recent trip to San Diego seemed like every sandwich we ate had fresh, crisp coleslaw on it, either mayo or vinegar based. Loved that!!
