Delectable Ham Sauce

Ham always seems to end up on my Holiday menu, and at our house ham equals ham sauce. A Great Friend shared this recipe years ago. It has been on the menu ever since. It is light and creamy with a bit of a twang! It is delicious poured over a hot slice of  ham (or turkey), but is delightful the next day spread on rolls for sandwiches. It is even a tasty dip for  Little Smokies, cheese slices, or Summer Sausage. It will stay good in the fridge for a week.

Mustard Sauce

1/2 cup sugar (or Splenda)
1/2 cup white distilled or apple cider vinegar
1/2 cup milk
3 tablespoons dry mustard powder
2 teaspoons cornstarch
2 eggs, beaten
2 tablespoons butter or margarine

In a medium saucepan combine sugar, mustard powder, and cornstarch. Whisk together vinegar, milk, and beaten egg. Whisk wet ingredients into dry ingredients. Cook over medium heat; stirring constantly until sauce comes to a boil and thickens. Take sauce off of heat and stir in butter until thoroughly combined. Refridgerate leftovers.

Great Kid Friendly Recipes

If you are looking for something to do to keep the kids entertained (especially if you are in the middle of the coldest, wettest, summer break EVER!) go check out Jamie Cooks It Up! She has had some fun summertime, kid friendly recipes this week! I'm loving her recipe for Foil Dinners that uses chicken instead of ground beef. Her Frozen Banana Pops look like they are to die for! Bananas and chocolate are favorites at my house. I can't wait to see what see has in store next!
So pull out the bowls and measuring spoons for some edible entertainment!

Yeah! I Found My Friend!

I'm so excited!!!! I have discovered the my dear friend's blog. She moved out of my neighborhood several years ago, and I had lost touch with her. She is the kind of friend that you can unburden your troubles and traumas (or should I say dramas) on; she will always listen and never judge. We shared many laughs and tears together. Baseball season has not been the same since she left. Anyway, She has always been an amazing cook, and I can thank her for many of my tried and true recipes. As I read through her blog yesterday it was like a trip down memory lane. Like the times she brought my family Chicken Cordon Blue casserole and Poppy Seed Chicken after the births of my two youngest children. I also remember how my hubby raved about her Delicious Salsa for months, and begged me to get the recipe (I am VERY salsa challenged!). Her Old Fashioned Pot Pie is the only recipe my family will eat. Now I have discovered a new recipe on her blog for Enchilada Sauce that I am going to give a try tomorrow night (I can hardly wait). Thanks Tiff for all the great recipes! I hope you don't mind my sharing your brilliance with every one. You have come to my rescue, again!

Sour Cream Substitute

I took advantage of the fabulous cottage cheese sale at Smith's about six weeks ago (it was $.88 a 16 oz. container) and bought 8 containers. Usually my family devours it and I can't keep it in the house. So, no worries. Well, when I cleaned the fridge out last week I found four cartons that had been kicked to the back of the fridge. Crud! It is at it's expiration date. Usually, I treat expiration dates as a suggestion, but we are pushing our luck now. To use it up I have gotten creative, and started using it in place of sour cream in recipes. I substituted a cup of it in The Sour Cream Blueberry Muffin recipe I got off the Idea Room. Delicious muffins, by the way! I pureed another cup and mixed it in with the sour cream for Chicken Enchiladas for dinner Tuesday. Today, I threw a carton in the food processor with two tablespoons of milk and a package of ranch dip mix. My family liked it better than when I use sour cream (and it's healthier, too). Tomorrow, I am using the last of it in baked pasta (basically my lasagna recipe, but I cook macaroni and use it in place of lasagna noodles).
